PISTACHIO PANCAKES WITH HAUPIA SAUCE!

Directions

Haupia Sauce
1 can (13.5 oz) coconut milk
1/4 cup sugar
1 tablespoon cornstarch

Combine all ingredients in a sauce pan, and cook over medium heat until the sugar is melted and begins to thicken. Turn off heat. Let the sauce cool.

Pistachio Pancakes
2 cups flour
2 tablespoons baking powder
1 (3 oz.) box Instant Pistachio Pudding
1/2 teaspoon salt
2 tablespoons sugar
2 cups milk
2 eggs beaten
1/4 cup butter, melted
5-10 drops of green food coloring, optional
whipped cream for topping, optional
chopped pistachios for topping, optional

Melt the butter and set aside to cool. In a large bowl, combine all dry ingredients and mix to combine. In a separate bowl, mix together the eggs, milk and melted butter. Add to dry ingredients and stir until smooth. Add food coloring (optional) and stir.

Heat frying pan on medium/high heat. Spray pan with cooking spray first. Pour pancake batter into the pan using either a measuring cup or an ice cream scooper. Cook pancake until the sides look dry and bubbles appear across the top of the batter. Flip and cook until nice and fluffy. Remove to serving plate, and drizzle on the haupia sauce. Top with whipped cream and chopped pistachios if desired.
