How To Make G-Eazy's Waffles From Scratch
Some families go to church on Sundays, others, like G-Eazy's family growing up, made waffles. In the latest episode of Made From Scratch, we joined the rapper and his mother in the kitchen as they prepared one of their most beloved meals: waffles. But this ain't your typical Eggo. With some unlikely ingredients and techniques, these waffles somehow manage to balance being crispy on the outside and soft and fluffy on the inside. Now, G-Eazy's mother didn't give the entire recipe away. After all, it is a family secret—but we took notes and this is the closest you'll get to the real deal. In a mixing bowl, whisk together 2 cups flour, 3 tablespoons baking powder, 3 tablespoons sugar, 1 teaspoon salt until thoroughly blended.
Mix ¼ cup fresh orange juice with ¾ cup whole milk. Separate 3 egg whites from yolks. Beat the egg yolks thoroughly. Add orange juice, milk, melted butter, and egg yolks to the dry mix and mix well. Whisk the egg whites until they form stiff peaks and carefully fold into the batter.
Preheat a waffle iron to medium high. When ready, pour one cup batter onto griddle, close and cook for 3-5 minutes depending on desired crispiness.
